Apple Recipes to get you Through The Work Week

Easy Apple RecipesThe crisp fall air is finally settling in and what a better way to warm up than with some easy apple recipes to get you through the work week?

Late September and October is when apple season is at its peak harvesting time so get out there and pick some fresh apples to use in these easy, stress-free apple recipes.

It’s hard to go wrong with apple recipes in the fall, but with these simple recipes, you’re sure to wow your friends, family and of course yourself!

Baked Pork Chops with Cinnamon Apples

Yields: 4 Servings, Prep Time: 10 minutes, Cook Time: 12 hours

Ingredients:

  • 4 Bone-in pork chops
  • 4 Fresh tart apples
  • Cinnamon
  • Nutmeg
  • Brown Sugar
  • Salt
  • Pepper
  • Butter

Directions:

  1. Preheat your oven to 400 degrees F (around 204 degrees C).
  2. Slice the apples thin and line the bottom of a baking dish with the apples.
  3. Place salt and peppered pork chops on top of the layer of apples.
  4. Combine nutmeg, cinnamon and brown sugar (approximately 1 tablespoon of sugar per apple) and sprinkle mixture over pork chops and apples (approximately 1 tablespoon per apple).
  5. Place in the hot oven and bake for about 45 minutes. Remove and baste with own liquid.
  6. Cover the baking dish with foil and add in a few tablespoons of water or cider and replace in the oven for another 20-25 minutes or until pork chops have an internal temperature of 165 degrees F.

Slow Cooker Apple Butter

Yields: 4 pints, Prep Time: 30 minutes, Cook Time: 12 hours

Ingredients:

  • 6 pounds of apples, peeled, cored and sliced
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract

Directions:

  1. Place apples in the slow cooker.
  2. In a bowl, combine the sugars and spices and sprinkle over the apples. Stir gently to combine.
  3. Cook on low for 10 hours.
  4. Add in vanilla extract and break up any large chunks of apples that remain, recover and cook for additional 2 hours.
  5. After the full 12 hours, use an immersion blender to remove any remaining chunks of apple until the apple butter is completely smooth. If you don’t have an immersion blender, you could puree the mixture in a blender or food processor, just be careful when pureeing in the blender — the steam could build up and cause the lid of the blender to explode off resulting in burns.
  6. Allow the mixture to cool completely before spooning into sterilized jars.

The apple butter can be refrigerated up to two weeks or frozen up to two months. Enjoy it for breakfast on toast, muffins, ice cream… or straight out of the jar. Whichever method you prefer.

Caramel Baked Apples

Yields: 4, Prep Time: 10 minutes, Cook Time: 30 minutes

Ingredients:

  • 2 Crisp apples
  • 2 tablespoons butter
  • 3 tablespoons brown sugar
  • 1 tablespoon flour
  • 1 teaspoon of cinnamon
  • 4 caramel candies
  • Optional toppings: nuts, ice cream, more cinnamon, more caramel… options are limitless.

Directions:

  1. Preheat the oven to 375 degrees F (about 190 degrees C)
  2. Cut the apples in half around the “equator” and remove the seeds/core.
  3. Using a thin knife, make two deep circular cuts around the center of the apple (like onion layers). Next, turn the apple, cut side down and make vertical cuts all the way around the apple without going all the way through. If done correctly, your apple should look like a blooming onion.
  4. Place the apples, cut side up,  in an oven-safe dish and place a caramel (or two) in the center of each apple half.
  5. Heat the  butter and brown sugar in the microwave for 30 seconds, stir and microwave an additional 30 seconds. Remove the mixture from the  microwave and add in the flour  and cinnamon. Divide the mixture over the top of the four apple halves.
  6. Place the dish in the oven and bake for 25 to 30 minutes.
  7. Remove them from the oven once they’re soft and the caramel is melted and serve!
